Sheet pan breakfast for dinner hash

The time of year when leeks and new potatoes are ready on the farm!


PREP TIME: 20 ish Min. COOK TIME: 30 ish Min.

SERVED: 2 hungry farmers who went back for seconds. No leftovers.


Ingredients

3 cloves Garlic , smashed 1.5 lbs. New Potatoes , cut in small cubes 2 Leeks (white and light green parts only), chopped 1 handful of Shishito Peppers chopped 1 handful of Cherry Tomatoes cut in half 2 tbs olive oil 1 tsp each garlic powder, paprika and salt some pepper & red pepper flakes 4 eggs some crumbled feta cheese 2 tbsp chopped parsley

Instructions

Preheat oven to 425°F. Line baking sheet with parchment paper.

On prepared pan, toss together garlic, potato, leek, shishitos, oil, garlic powder, paprika, salt and pepper; arrange in single layer.

Bake, tossing after 15 minutes, until potatoes are tender and edges are starting to brown, 20 to 30 minutes. Add Cherry Tomatoes at the half way point.

Remove pan from oven. Using back of large spoon, create 4 indentations in potato mixture, each about 3 inches in diameter. Crack 1 egg into each indentation. Return pan to oven; cook until egg whites are set and yolks are still slightly runny, about 5 minutes.

Sprinkle vegetables and eggs with feta cheese and parsley.
